There’s nothing better than starting the day out right with a delicious plant based breakfast!

When in a pinch, I love to throw together a quick green smoothie. My all time favorite smoothie recipe is:

A Frozen Chopped Banana

1 Heaping Tablespoon Peanut Butter

1 Tablespoon Chia Seeds

2  Large Handfuls Spinach

1 Hefty Pour of Chocolate Almond Milk

Another quick vegan breakfast option is avocado toast. Serious Eats culinary geniuses spell it out beautifully in this recipe for Avocado & Refried Beans on Toast.

If you’re in to baking, I suggest making a batch of vegan breakfast muffins. I like to make a batch and freeze them; it’s so easy to warm a single muffin up quickly in the microwave before I start my day. OhSheGlows is a vegan wizard in the kitchen. So I can say that my all time favorite plant based breakfast option is a homemade protein packed veggie burrito.

I also like to make these ahead and freeze them. Furthermore, they are so versatile and you can fill them with whatever veggies your prefer. My favorite burrito style includes:

1 Burrito Sized Flour Tortilla

1/2 cup Black Beans

1/4 cup Brown Rice

1/4 cup Vegan Cheddar Cheese

Chopped Onions & Tomatoes

Salsa
